Happy Easter everyone ...

The sun is shining, the sky is blue and today I feel loads better. After having a cold that has knocked me off my feet for a few weeks and messed up my London Marathon training I finally managed a 4 miles run. which felt great!!

My cold now feel like its nearly gone ( touch wood, touches head!!). I still look a little poorly around my eyes but yippie feel like today is going to be a great day, don't eat to much chocolate, oh go on then I will join you :)

Spring Is On Its Way, Right?...

Don't you just love it when you find a pair of shoes hiding in your waredrobe what you brought in the sales a few months back that you had forgot u even brought? I can remember buying 3 pair of shoes at Christmas for £5-00 a pair but could not even remember this style!!

 Maybe it's because of all the snow and bad weather? or just because I've been wearing boots for the last 3 months? oh well its like hitting the sales again without having to pay out :)

These picture were taken a few weeks ago when I though Spring was on its way!!. 

Was such a beautiful day on a trip to London, the sun was shining and it made us all excited that summer was on its way. Now it has turned around and shocked us all with the cold and snow back, making me think its more like Christmas than Easter.. How much longer is the snow going to be around for? 

This weather is really making me long for sunshine, to hear the bird chirping and see the pink blossoms growing on the trees...

Chocolate Coconut Truffles...


Ready in 50 minutes

Serves: 5

Ingredients

1 packet (250g) of milk arrowroot biscuits

1/3 cup (40g) of Food Thoughts Cocoa Powder

1/2 cup (45g) of desiccated coconut (plus a little extra for rolling the alls in)

1 tin (395g) of condensed milk


Method

Prep: 20 minutes | Extra time: 30 minutes, chilling

Crush the biscuits and place into a mixing bowl

Add cocoa and coconut, stir together then add condensed milk

Take small amount of mixture and roll into a ball, then roll through extra coconut

Continue with the rest of the mixture, place the chocolate balls on a plate and chill in the fridge for 30 minutes

Bourbon Bacon Chocolate Truffles...



Ingredients

6 slices of streaky bacon

6 heaped tbsp soft brown sugar

250 ml single cream

250g dark chocolate (roughly chopped)

25ml bourbon

100g cocoa

Method

Preheat oven to 200ÂșC.

Spread one heaped tbsp of sugar on each bacon rasher, rubbing it in on each side with your fingers. Lay out flat and cook for 10 minutes, turn and lay flat and cook for 10 more minutes.

Take each slice out and lay on a buttered plate or greaseproof paper and allow to cool. Chop finely when cold.

Heat the cream until it just shivers, if you boil it it will change the taste and be too hot for the chocolate.

 Add the chocolate off the heat and stir in to melt, and add the bourbon add bacon. Stir in and leave to chill in the fridge for 2 hours until solid.

Put the cocoa on a plate and scoop out your truffles with a teaspoon. Roll them in the cocoa and chill.

Shamballa Bracelet By Cutey Review...

On Saturday I received these two beautiful shiny shamballa bracelets in the post form cutey.co.uk.

After I came home, all excited about being first lady at a park run I found these wonderful bracelets just waiting to be opened.


 Packaged up safely in a padded envelope they arrived through the letter box (which was great for me not having to wait in to sign for them).

I was really looking forward to reviewing the bracelets as I am like a magpie when it comes to anything shiny. These bracelets are just that and so sparkly too. I was trying to guess which colours I would be sent, as Ashley was picking the colours out for me.



Yes I thought two of my favourite colours (see photos)!! first impressions wow! , I was very pleased with them.

 I reviewed 2 charm bracelets from cutey in November 2011 which still look like new, so I know their bracelets are going to be good quality and long lasting.

What I think of the bracelets

As you may have guessed I love these bracelets, they remind me of mini disco balls with all there shininess and glittery stones. They are good quality and not too heavy. 9 different beads on each bracelet individually wrapped in a hard wearing black cord with an amazing 84 crystals on each. They are easy to put on, just slide the cord to open and close. I think is a very reasonable price as I have seen these priced up a lot higher and taking into account that the UK delivery is free.

What I Wore : Parents Evening ...


One Monday I did it!!!

I did my first 20 miles run getting ready for London Marathon.

 I knew something was not quite right with me feeling weak and dizzy at 14 miles but knew I had to do 20. After running around the block for the last 6 miles I finished my run at 20.01 miles which took me all morning, well 3 hours 47 minutes or something like that. Next day I woke up full of cold and with a really bad sore throat....Needless to say I have given up on my run streak that lasted since Christmas, had lots of sweet things and a few pot noodles. Feeling slightly better today I had to stop feeling sorry for myself and get ready for parents evening...

Lemon Curd And Cherry Mini Cheesecakes...



Makes about 14-16 cupcake size individual cheesecakes

You Will Need

  • 200g ginger biscuits
  • 60g melted butter
  • 500g cream cheese
  • 250g mascarpone
  • 100g caster sugar
  • 1 jar English Provender Lemon curd
  • 2 eggs
  • 20 cherries, pitted and simmered in a pan for 10 minutes with a splash of water (If not in season use 150g drained cherry compote -I use Bonne Maman, or tinned cherries)

How To Make

  • Preheat the oven to 180c. 
  • Crush the biscuits in a food processor and pour the melted butter over.
  • Mix well and spoon into the bottom of 14-16 cupcake cases set in a cupcake tin.
  • Using an electric mixer beat the cream cheese, mascarpone, lemon curd and sugar.
  • Add the eggs one at a time.
  • Beat until smooth and then pour over the biscuit base.
  • Bake for 5 minutes and then lower temperature to 150c and bake for another 15-20 minutes.
  • Turn off the oven but let them sit in the oven to cool for a bit.
  • It will still be slightly wobbly but it will firm up in the fridge.
  • When cool, place the tin in the refrigerator.
  • When ready to serve peel off the cupcake wrappers and dollop each cheesecake with some cherries.
