Easy Pizza Muffins


My kids love having pizza muffins every Friday at school so I decided to surprise them and make lots of yummy pizza muffins at home to share. These pizza are great for party food too...


Makes 20

Ingredients
  • 10 Muffin (breakfast roll ones)
  • 180g Grated cheese
  • 20 tablespoons of tomatoes paste
  • 10 slices of chorizo
  • 3 large slices of ham
  • Few chopped mushrooms
  • Spray light cooking spray
Method
  • Pre heat oven to 180c.
  • Get a large cooking tray ready.
  • Cut the breakfast muffins in half and lay cut side upwards on the tray.
  • Place a spoon full of tomatoes paste on each muffin and spread all over the tops.
  • Sprinkle the cheese evenly over the muffins.
  • Chop the chorizo ham and mushrooms up in separate bowls.
  • Sprinkle different topping on each of the muffins and mix and match some so there is lot of variety.
  • Just ham? just mushroom? chorizo and mushroom ? or all 3?
  • A quick burst of cooking spray on top
  • Cooki for around 15-20 minutes until golden and cooked.

Secret Ingredient Challenge With Heinz Tomato Ketchup : Creative Mondays Blog Hop...



This week I was kindly invited to take part in a ‘Secret Ingredient’ challenge with Heinz Tomato Ketchup. I got sent this fun Heinz cooking pack, including a branded apron, oven gloves, wooden spoon and squeezy Ketchup holder and bottle of Heinz Tomato Ketchup.

All I have to do is cook my own secret recipe using Tomato Ketchup!! With a family of 6 we all love pizza so I made a quick,easy and very tasty pizza.

His And Hers Valentines Day Meal....



For Her-

Crostini au Gratin with Walnuts Pears

Serves 2

Ingredients

  • ½ baguette
  • 2 tbsp rapeseed oil
  • 150 g/5 oz grated Västerbottensost cheese
  • 200 ml/7 fl oz crème fraiche
  • 2 pears
  • 2 tbsp light muscovado sugar
  • 1 large pack mixed salad e.g. frissée, radicchio and lollo rosso
  • 75 g/3 oz walnuts
  • Salt and pepper


Preparation

  • Preheat the grill to 250°C/475°F/ High.
  • Cut the baguette into 1 cm/½ inch slices, brush both sides with a little oil and toast under the grill for a couple of minutes until golden brown.
  • Mix the cheese with the crème fraiche and put a dollop on each crostini.
  • Cut the pears into 12 wedges. Brush with oil and arrange with the crostini on a baking tray.
  • Sprinkle a little sugar over both creamed cheese and pears and grill until the creamed cheese is nicely browned.
  • Remove and serve on a bed of lettuce leaves.
  • Scatter with walnuts and drizzle with rapeseed oil if desired. Season with salt and pepper.



For Him- 

Luxurious Shellfish Pizzas

Makes 20 small bite size or 2 large pizzas

Ingredients

  • 25 g/1 oz fresh yeast
  • 150 ml/5 fl oz water
  • 1 tsp caster sugar
  • 1 tbsp rapeseed oil
  • 225–275g/8-10oz plain flour
  • ½ tsp salt
  • 1 tbsp fennel seeds or dill seeds
  • 10 scallops
  • 20 fresh mussels
  • 20 scampi
  • 2 sliced red onions
  • 1 pack fresh spinach
  • 150 g/5 oz grated
  • Västerbottensost
  • Black pepper


Preparation

  • Preheat the oven to 250°C/475°F/Gas 9.
  • Mix the yeast with water warmed to 37°C/98°F.
  • Add sugar, oil, flour, salt and fennel seeds and knead for 10 minutes until the dough is smooth and elastic. 
  • Leave to rise for 30 minutes.
  • Halve the scallops.
  • Wash the mussels and tap them sharply. Discard any that do not shut.
  • Divide the dough into 20 small pieces or make 2 large pizzas. 
  • Roll out each one thinly. 
  • Arrange the filling on top and sprinkle with cheese.
  • Bake for 10 minutes or until the mussels have opened and the pizzas are golden brown. 
  • Sprinkle lightly with pepper.

The Christmas Pizza from Fire & Stone....


Ingredients:

Medium pizza base* (from a ready-made pizza mix or a ready-made base)

Sliced roast turkey breast (available ready cooked in supermarkets)

5 cooked chipolatas cut up into 1cm pieces

Roast potatoes (approx. one medium potato roasted, cut into small cubes)

Cooked stuffing (enough for four cherry tomato size small balls)

50ml red wine gravy – leave it in the fridge overnight so it is really thick

5 Brussels sprouts

20g pancetta

Small chunk of brie (cut into about four 1cm slices)

About 50g Cranberry jelly

Pinch of flat parsley

Method:

Spread the thick gravy across the base, like you would with traditional tomato sauce!

 Scatter the sliced turkey base evenly then follow with the sausage pieces and evenly place the roast potato cubes.

Sauté the Brussels sprouts with the pancetta, chop them up and spread them across the pizza before draping the slices of brie on top (these will melt over the rest and taste delicious).

Finally, scatter the stuffing, either by breaking it up with your fingers and letting it fall or placing the small balls on.

Cook the pizza in a preheated oven for 10 minutes (or according to instructions on pizza base packaging) at 200 degrees Celsius (390 degrees Fahrenheit or gas mark 5) until the brie is bubbling.

 When you take it out of the oven put a dollop of cranberry jelly in the middle and finish with some chopped parsley.

Creative Thursday #week 3...

Hello and welcome to Creative Thursday....



This is a creative blog hop where you can add all your home made creative projects from making cakes to needle craft and you can add as many links as you like...
So one question ...What have you been making ?

Quick And Easy French Bread Pizza




What you need
  • 1 large french bread
  • 1 tbsp virgin olive oil
  • 2 piece of garlic crushed
  • 1 onion chopped finely
  • 300g of sieved tomatoes
  • 1 tbs of tomatoes puree
  • Mixed herbs
  • Salt and pepper
  • sliced cheese

What to do

  • Pre-heat oven to 180 degrees.
  • Heat your olive oil in a pan over a medium heat and fry your chopped onions and crushed garlic until cooked.
  • Add your sieved tomatoes to the pan then add your mixed herbs 1 tbs or to your taste, a  pinch of salt and pepper and tomatoes puree.
  • Leave the sauce to simmer for about 7 minutes.
  • Cut the French bread long ways in half then into suitable size pieces, arrange on a tray crust sides down.
  • Spoon equally amounts of the sauce onto the bread and lay the sliced cheese onto the pizza (as much or as little you like)
  • Put into the oven for around 6-10 minutes until the cheese turns brown
  • Cool slightly and enjoy...
