Olive And Fig Ice Cream To Keep You Super Cool This Summer:
Now the weather is beginning to get a little warmer, we’re looking for ways to cool down and what better way than with a delicious ice cream.
If the usual vanilla, chocolate or strawberry don’t take your fancy, then why not try this recipe for olive and fig ice cream from the leading Spanish olive and Mediterranean food brand, Fragata.
The ice cream is also incredibly creamy and flavoursome and can be served in a variety of ways.
It makes a brilliant summer starter, but also perfectly complements almost any dessert, fruit salad or simply enjoy in a traditional cone!
Olive And Fig Ice Cream To Keep You Super Cool This Summer
Olive and fig ice cream:
What You’ll Need:
2 cups of black pitted Fragata olives finely chopped
1/2 cup of dried figs
1/2 an orange
1 and a 1/2 cups of whole milk
One and a 1/2 cups of cream
One cup of sugar
A tsp vanilla extract
3 egg yolks
1/4 cup olive oil
Olive And Fig Ice Cream
Method:
1.) Place the olives in a bowl with enough water to just cover them. Leave for a couple of hours. Drain the water.
2.) Sweeten the olives by placing a pan on a medium heat with 1 1/2 cups of water, juice of 1/2 an orange and 3/4 cup of sugar.
3.) Bring to the boil over a medium heat, while stirring. Simmer for 6 minutes.
4.) Next, take the pan off the heat and allow the olives to cool. Strain and drain the olives, then chop finely.
5.) Rehydrate the figs by placing them in enough hot water just to cover them in a bowl. Chop the figs when softened.
For The Ice Cream:
1.) Add milk and vanilla extract to a pan and bring to a medium heat.
2.) In other bowl, add egg yolks, sugar and whisk until creamed
3.) Use a ladle to slowly add the heated milk into the creamed eggs and sugar, whilst continuously whisking.
4.) Once all the milk has been added to the egg/sugar mixture, pour back into the pot and stir the ice cream base with a wooden spoon over medium heat, until thickened.
5.) Allow the base to cool for at least four to five hours.
6.) When the ice cream has sufficiently cooled insert it into your ice cream maker.
7.) Churn for around 25 minutes.
8.) Add the chopped figs and olives.
9.) Pour in the olive oil and after five minutes the ice cream should be well blended
10.) Serve and enjoy.
