I am trying to be healthier and I have started making these yummy treats up again in the morning to save me looking for biscuits when I fancy something sweet.

Healthy Fruit Cocktail Snack To Meal Prep:

Serves 1

Ingredients:

  • Half of lemon, juice squeeze out
  • 1 Teaspoon of runny honey
  • 1 Apple 
  • 1 kiwi
  • 50g Blueberries
  • 50g Strawberries
  • 50g Red or green grapes

Method:

  1. Firstly, squeeze your half of lemon into a bowl and mix with the runny honey. Mix well.
  2. Wash apple, cut into slices, remove the core. Place into the lemon mix, turn both sides of each to cover all apple in lemon juice so they don’t turn brown.
  3. Peel and slice the kiwi, add to the bowl.
  4. Wash the blueberries, add to the bowl. 
  5. Wash, hull and slice the strawberries, add to the bowl. 
  6. Wash, slice the grapes and add to the bowl. Give the fruit a big mix and add to a jar with a lid. Pour the lemon mix inside and give a good shake.
  7. All ready to snack on throughout the day.

Tips: To give your fruit cocktail a zesty and aromatic twist, grate some citrus zest, such as lemon or orange, over it. So yummy.

Drizzle some honey or agave nectar on top of your fruit cocktail to naturally sweeten it. It provides some sweetness without using refined sugars.

Greek yoghurt can give your fruit cocktail smoothness and a protein boost. Additionally, it imparts a tart flavour that balances the richness of the fruits.

    Have always loved fruit salad, and rarely think to make them with kiwi, though it is such a refreshing addition. Love youridea of snacking on this salad whenever the sweet tooth starts its craving (or is it craven) nagging.
