Happy Sunday. I woke up early today, did my run with Mollie the Collie and now I am watching the London Marathon and dreaming of baking cakes!!

Today I am sharing this Home-made Cherry And Almond Cake. How yummy! I love cakes with cherries in them. Cherries scones are also one of my favourites.

Cherries and almonds were made to go together and by using cocktail cherries you add real depth to the almondy taste with the added maraschino flavour.

2. Place the cherry halves in a small bowl and coat with 1 tablespoon of the flour. Put to one side.

3. Place the butter and sugar in a large bowl and cream together. Add the almond essence and then gradually add the eggs, beating well in between each addition. Stir in 60g of flaked almonds and the lemon rind.

4. Fold in both flours and then gently fold in the cherries. Spoon the mixture into the prepared tin and level the surface

5. Sprinkle the remaining almonds over the surface and bake for approx. 1 hour 10 minutes until golden.

6. Remove from the oven and allow to cool on a wire rack.
