  1. Happy Monday, Claire! I hope you had a lovely weekend. I didn't know it was spinach day. I've shared my Cod with Mushroom and Spinach Sauce in honour of it! I'm also sharing my Best Avocado Toast recipe. It really is avocado toast with a difference. Thank you for hosting and have a lovely week!

  17. I had no idea it was spinach day but I did make a salad with it this morning for us to eat at dinner tonight and I had them throw a bunch of baby spinach on my lunchtime grinder. I just love spinach.
