I think we are having a mini heatwave this week, well I know we are! It is still red hot outside at 6 pm. It is so warm out there. All I want to do is hide in the shade and eat strawberries and sip on homemade iced cold lemonade. #Heatwave
Mollie The Border Collie was so tired after our walk this morning. She just flopped on the kitchen floor and hoped I would not move her, bless her! I would hate to be wearing a big fur coat like she has on, in this weather.
We also had a little walk this afternoon and I could feel the sun burning my back.
Why not, serve this as a summer dessert on warm balmy evenings. It’s healthy, slightly unusual and very pretty. It also works well as a special breakfast fruit salad. You can find rosewater in most supermarkets and it’s worth the effort to get it as it really makes the dish.
How To Make A BerryWorld Strawberry, Fig and Rosewater Salad:
Preparation time: 5 minutes
Cooking time: n/a
For The Syrup:
100g caster sugar
1 tsp rosewater
200ml of greek yoghurt
What To Do:
1. Firstly make the syrup by combining the sugar and water. Bring it to the boil and simmer until the sugar has dissolved. Then take off the heat and add the rosewater. Cool completely.
2. Next, take the strawberries and hull them, leave them whole and arrange on a platter or large plate.
3. Quarter the figs and arrange on top. Finally, sprinkle over the rosewater syrup. Serve with the greek yoghurt on the side.
