Today I have 3 healthy breakfast recipes from Vita Coco. The perfect way to start any day this Winter!
3 Healthy Porridge Recipes For National Breakfast Week:
1.) Caramelised Apple & Cinnamon Porridge:
This delicious breakfast will give you a comforting start to the day with aromatic cinnamon and sweet apples!
Ingredients:
- 1 Apple
- 1 pinch of Ground Cinnamon
- A sprinkle of Chopped Mixed Nuts
- 100g Porridge Oats
- 200ml Vita Coco Coconut Milk

Method:
- Core and slice the apple and place in a frying pan over a medium heat.
- Whilst they are cooking combine the porridge oats and Vita Coco Coconut Milk in a separate pan and begin to cook.
- Turn the apples occasionally until they are brown and have started to caramelise in their own juices.
- By now your porridge should be cooked.
- Transfer into a bowl and top with the apples, mixed nuts and large sprinkling of cinnamon.

Caramelised Pear Porridge with Cashew Nuts & Coconut Flakes:
Who says porridge has to be boring?
With tangy pears and crunchy cashew nuts, this breakfast will have you going coconuts all day!
Ingredients:
- 1 Pear
- 1 handful of Cashew Nuts
- 1 handful of Raisins
- 1 Sprinkle of Coconut Flakes
- 100g Porridge
- 200ml Vita Coco Coconut Milk
Method:
- Combine the oats and Vita Coco Coconut Milk in a pan over a medium heat and allow to cook.
- Meanwhile, core and slice the pear and arrange in a frying pan over a medium heat, allowing the pear to caramelise in its own juices.
- Once the porridge is cooked, transfer into a bowl and mix with the pear.
- Sprinkle the cashews, raisins and coconut flakes on top.

Coconut Porridge with Figs, Pistachios & Honey:
This quick and easy porridge combines delicious figs with crunchy pistachios and a dash of sweet honey – breakfast never looked (and tasted) so good!
Ingredients:
- 2 ripe Figs
- 1 handful of shelled Pistachios
- 1 tsp Honey
- 100g Porridge Oats
- 200ml Vita Coco Coconut Milk
Method:
- Combine the oats and Vita Coco Coconut Milk in a pan over a medium heat and allow to cook.
- Chop the figs into slices and put to one side.
- Once the porridge is ready, transfer into a bowl and top with the figs and the pistachios.
- Finish with a drizzle of honey.
