Easter Lunch Recipes to Enjoy with Friends and Family from California Walnuts:

So today California Walnuts have shared five delicious Easter lunch ideas, perfect to enjoy with friends and family and certain to impress guests! Recipes also include Roasted Lamb with California Walnut Salsa, Hasselback Squash with California Walnut Crumb, Onion & California Walnut Tart Tatin, Cajun Glazed Carrots with California Walnuts and California Walnut & Strawberry Pavlova. As I also have a sweet tooth, I know which recipe I want to try first!

5 Easter Lunch Recipes To Enjoy With Friends And Family

Firstly, Hasselback Squash with California Walnut Crumb:

Prep: 15 minutes | Cook: 1 hour

Serves 2

Ingredients:

  • 1 butternut squash, peeled, halved and deseeded (1.3kg)
  • 2 cloves garlic, sliced
  • 3 tbsp olive oil, plus a drizzle
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 75g California Walnuts, chopped plus 25g
  • ½ x 25g pack fresh coriander, chopped, plus extra to serve
  • 2 tbsp chopped chives
  • 1 lemon
  • 150g Edamame beans

Method:

  1. Firstly, preheat the oven to 200oC, gas mark 6.
  2. Place 1 squash half, flat side down on a chopping board between 2 wooden spoons (to stop the knife cutting all the way through).  Made cuts, 0.5cm apart all the way along the squash. Repeat with the other squash half and place both in a roasting tin, push the garlic slices randomly into the cuts.
  3. Mix 2 tbsp oil with the spices and drizzle over the squash, bake for 40 minutes.
  4. Mix the 75g walnuts, herbs, lemon zest and remaining oil together and sprinkle over the squash, bake for a further 20 minutes until golden and tender.
  5. Meanwhile, stir fry the beans and remaining 25g walnuts in a drizzle of oil for 1-2 minutes, stirring in the juice of half the lemon at the end. Serve with the squash.

Cooks Tip: Also, add harissa paste to the walnut crumb for extra heat.

Secondly, Onion & California Walnut Tart Tatin:

Prep: 15 minutes | Cook: 25-30 minutes

Serves 4

Ingredients:

  • 2 tbsp olive oil
  • 3 red onions, cut into thin wedges
  • 100g California Walnuts
  • 150g caramelised red onion chutney
  • 320g pack puff pastry sheet
  • 75g dolcelatte
  • 1 tbsp chopped chives

Method:

  1. Firstly, preheat the oven to 200oC, gas mark 6.  Grease and base line a 32x22cm tin.
  2. Heat a little oil in a large frying pan and fry the onion wedges in 2 batches for 3 minutes, turning halfway until golden. Scatter the walnuts over the tray and add the onion wedges, season.
  3. Spread the chutney over the pastry, leaving a 2cm border round the edges, place the pastry, chutney side down, on top of the onions and tuck the pastry edges inside the tin to enclose the onion filling.  Bake for 25-30 minutes until golden.
  4. Upturn onto a serving board and dot with the cheese and sprinkle with chives to serve.

Cooks Tip: Omit the cheese for a vegetarian option. Also, great served with a side salad. Try any flavour chutney for a variation. So tasty.

Thirdly, Cajun Glazed Carrots with California Walnuts:

Prep: 10 minutes | Cook: 20 minutes

Serves 4

  • 500g baby topped carrots, washed
  • 100g California Walnuts, roughly chopped
  • 1 clove garlic, crushed
  • 1 tbsp Cajun seasoning
  • 2 tbsp Maple syrup
  • 2 tbsp olive oil
  • 1 tbsp chopped chives

Method:

  1. Firstly, preheat the oven to 200oC, gas mark 6.
  2. Place the carrots and walnuts in a large roasting tin.  In a bowl, mix together the garlic, Cajun seasoning, maple syrup oil and 2 tbsp water, season and drizzle over the carrots, toss to evenly coat.
  3. Bake for 20 minutes or until the carrots are tender. 
  4. Sprinkle with chives and serve.

Cooks tip Try using chantenay carrots or wedges of parsnips. So tasty.

Fourthly, Roasted Lamb with California Walnut Salsa:

Prep: 15 minutes plus resting | Cook: 1-1½ hours

Serves: 6

For the Lamb:

  • 2 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 tbsp chopped fresh rosemary
  • 900g boneless leg of lamb

For the California Walnut Salsa:

  • 75ml walnut oil
  • 4 tbsp capers, rinsed and chopped
  • 6 anchovy fillets, minced
  • 10g fresh parsley, chopped
  • 10g fresh mint, chopped
  • 1 tbsp green peppercorns in brine, drained and minced
  • Zest and juice of 1 lemon
  • 125g California Walnut pieces, coarsely chopped

Method:

  1. Firstly, preheat the oven to 190°C/gas mark 5.
  2. In a small bowl, add Dijon, garlic, olive oil and rosemary; stir to combine.
  3. Place the lamb in a roasting tin and rub the marinade over the entire surface of the lamb.
  4. Roast the lamb on the centre oven shelf for 1-1½ hours, or until the internal temperature reaches 52°C, at the thickest point, for medium rare. Roast longer for desired doneness.
  5. Allow the lamb roast to rest for 30 minutes before slicing.
  6. For the California Walnut salsa, combine the walnut oil, capers, anchovy fillets, parsley, mint, peppercorns, lemon zest and juice and Californian walnut pieces in a medium sized bowl and spoon over the lamb slices. Last but not least, enjoy.

Last But Not Least, California Walnut & Strawberry Pavlova:

Prep: 20 minutes | Cook: 1 hour plus cooling

Serves 8

Ingredients:

  • 2 tsp cornflour
  • 2 tsp white wine vinegar
  • 1 tsp Vanilla extract
  • 4 medium egg whites
  • 200g caster sugar
  • 100g California Walnuts
  • 300ml double cream
  • 300g strawberries, quartered

Method:

  1. Firstly, preheat the oven to 140oC, gas mark 1.  Draw a 23cm circle onto a sheet of baking paper and place on a large baking tray.
  2. Blend the cornflour with the vinegar and vanilla.  Whisk the egg whites to stiff peaks and gradually whisk in the sugar a tablespoon at a time.  Whisk in the cornflour mixture and continue to whisk for 2-3 minutes until stiff and glossy.  Chop 75g of the walnuts and stir all but 1 tbsp of this into the meringue. Spoon onto the paper up to the line with a slight hollow in the centre.  Sprinkle with the remaining 1 tbsp chopped walnuts and bake for 1 hour.  Turn the oven off and leave the pavlova inside until cooled.
  3. Whisk the cream to soft peaks and spoon over the pavlova leaving a 3cm border round the edges, top with the strawberries and remaining walnuts.

Cooks Tip: Also, try making 6-8 individual pavlovas instead of a large one and top with other fruits. So tasty. *Approx. 30g
