Description: Our take on the classic avocado toast spices things up by topping mashed avocado with baby rocket, cherry tomatoes, toasted walnuts, and a drizzle of balsamic.

Ingredients:

  • 2 slices wholegrain bread
  • 1/4 avocado
  • 25g baby rocket
  • 4 cherry tomatoes, sliced widthways
  • 30g California walnuts, toasted and roughly chopped
  • 1 tsp balsamic glaze
  • 1/8 tsp freshly ground black pepper

Preparation:

1.) Firstly, toast bread in toaster or under the grill. Scoop out avocado flesh and mash in a small bowl with a fork. Spread mashed avocado evenly onto each toast slice.

2.) Top avocado with rocket leaves, tomato and chopped walnuts.

3.) Drizzle with balsamic glaze, then sprinkle with pepper before serving.
