A great recycle project, too. Recycle and reuse. It is good to use the old jars you have hanging around to make these puddings.

They’re easily transportable with their lids and they look great. They are so easy – baked fruit, spiced and nuts with a crunchy top. They are delicious enjoyed cold or hot with a dollop of ice cream. What is not to love?

Strawberry And Blueberry Hot Pots. Transforming simple ingredients into a charmingly rustic dessert, crafting Strawberry and Blueberry Hot Pots in recycled jars is both a tasty delight and an eco-conscious endeavor.

Begin by layering the jars. In a bowl mix a medley of fresh strawberries and plump blueberries, their vibrant hues promising a burst of flavour with every spoonful.

Add caster sugar, vanilla, cornflour, orange juice and zest, ensuring the berries are well coated then chill in fridge whilst making the dough.

Next, add the mixture to jars. Then crown each jar with a buttery crumble topping, crafted from blend the flour, nuts, spice, muscovado sugar and a pinch of salt, then rub the butter in to make a crumbly dough adding a delightful crunch to the ensemble.

Once assembled, these miniature delights are baked to perfection, filling the kitchen with an irresistible aroma that beckons all to gather round.

As the hot pots emerge from the oven, bubbling with fruity goodness, they promise not only a tasty treat but also a testament to the beauty of sustainable living, each jar a testament to the magic of repurposing and the joy of homemade goodness.

You’ll Need:

  • 300g BerryWorld strawberries, quartered
  • 300g BerryWorld blueberries
  • 50g caster sugar
  • ¼ tsp vanilla extract
  • 3 tbsp cornflour
  • ¼ tsp orange zest
  • 45g flour
  • 1 tbsp orange juice
  • 45g slivered almonds
  • ¼ tsp all spice
  • 45g chopped pecans
  • 75g muscovado sugar
  • Pinch of salt
  • 75g vegan margarine
  • 4-6 oven safe jam jars (with lids if you are transporting pots on a picnic)

Method:

  1. Firstly, heat your oven to 190c.
  2. In a bowl, mix the berries, caster sugar, vanilla, cornflour, orange juice and zest, ensuring the berries are well coated then chill in fridge whilst making the dough.
  3. In another bowl, blend the flour, nuts, spice, muscovado sugar and a pinch of salt, then rub the butter in to make a crumbly dough.
  4. Pour the berry mix into the jars then divide the dough into 4-6 balls, flatten them slightly and push down firmly on the berries like a lid.
  5. Place the jars on a baking tray lined with baking paper and bake for 20-30 minutes until bubbling and brown. Allow to cool slightly before serving or chill, screw lids on and transport for a picnic.
  6. Last but not least, enjoy.
