How To Make Cherry Tomato And Honeydew Melon Salad With Maple Syrup.

Juicy cherry tomatoes and succulent honeydew melon chunks are the stars of this dish, creating a vibrant contrast of colours and textures.

The sweet and earthy undertones of pure maple syrup perfectly complement the natural sweetness of the melon, while balancing the slight acidity of the tomatoes.

This salad is a unique blend of sweet and savoury, making it an ideal appetiser or a light, summery meal that showcases the best of seasonal produce.

Makes 8 portions

Ingredients:

  • 2 containers of cherry tomatoes on the vine, halved 
  • 500g of honeydew melon, seeded and cut into cubes 
  • 250g of pitted black olives, halved 
  • 250g flat-leaf parsley, chopped 
  • 2 garlic cloves, chopped 
  • 250g feta cheese, diced 
  • 30g (2 tbsp) coriander, chopped 
  • Juice and zest of a lemon 
  • 60ml maple syrup 
  • 60ml olive oil 
  • Salt and pepper, to taste

Method:

1.) Firstly, halve the tomatoes, olives; cube and seed the melon.

2.) Chop the parsley, coriander and garlic.

3.) Dice the feta cheese; zest and squeeze the lemon for its juice.

4.)  Last but not least, in a large salad bowl, carefully combine all the ingredients.
