I have been making: Quick and easy chicken pasta salad. Love cold pasta, do you too?

Beat the summer heat with my refreshing Cold Chicken Pasta Salad recipe. This chilled delight features tender chicken, al dente pasta, and a medley of crunchy vegetables, all tossed in mayonnaise .

Chicken Pasta Salad

Chicken Pasta Salad:

Bursting with flavours and textures, this salad is a perfect balance of protein, carbs, and nutrients.

Whether you’re planning a picnic, a afternoon tea, or simply craving a light yet satisfying meal, this easy-to-make recipe will keep you cool and satisfied on those hot summer days. Great for garden parties and picnics too.

Chicken Pasta Salad:

What You Need:

  • 250g pasta
  • 2 cooked chicken breasts that are cold from the fridge
  • 10 tablespoons mayonnaise
  • 2 red onions
  • half cucumber
  • salt and pepper

Method:

  1. Cook pasta according to packet once cooked remove and put through a sieve, rinse with cold water and leave till completely cooled.
  2. Once cold place in a big bowl, chop the onions, cut the cucumber into cubes ,dice the cooked chicken and add the mayonnaise.
  3. Mix well and add the salt and pepper to taste.
  4. Store in a airtight container in the fridge until needed.

Saves for a few days in the fridge so ideal to make up the day before.
