Christmas Leftover Veg Tart. Hello friends. Happy Saturday. A lovely few days off work with family, so now it is back to work for me today.

Do you have any leftover vegetable’s? Because we do! Today I am sharing a recipe for any leftovers this Christmas.

A versatile tart that will also work with whatever veg you have left over from the big day. This also works well with any firm or semi-soft cheese, including goat’s and blue cheese.

The Christmas Leftover Veg Tart is a delectable and resourceful dish that transforms the remnants of a festive feast into a culinary masterpiece. This savoury tart is a brilliant way to repurpose leftover vegetables from the Christmas dinner table, offering a delightful blend of flavours and textures.

The foundation of the tart is a buttery shortcrust pastry crust, providing a perfect canvas for the medley of vegetables that grace its surface.

Roasted Brussels sprouts, carrots, and parsnips etc, creating a harmonious combination of earthy and sweet notes.

The tart is bound together by a rich and velvety custard, enriched with cream and seasoned with thyme, enhancing the festive essence.

Topped with cheese, the tart achieves a satisfying balance between indulgence and wholesome goodness.

Whether served as a main course or a side dish, the Christmas Leftover Veg Tart is a culinary triumph, turning holiday leftovers into a culinary delight that embodies the spirit of resourcefulness and creativity in the kitchen.

Preparation time:20 minutes + cooling and chilling | Cooking time:1 hour 5 minutes
Total time:1 hour 25 minutes + cooling and chilling

Serves: 6 – 8

Ingredients:

  • 500g block Jus-Rol Shortcrust Pastry
  • Plain flour, for dusting
  • 350g mixed cooked vegetables (carrots, parsnips, sprouts etc), roughly chopped
  • 100g mature Cheddar cheese, coarsely grated
  • 3 medium Waitrose British Blacktail Free Range Eggs
  • 225ml single cream
  • 150ml whole milk
  • ¼ x 20g pack thyme, leaves only

Method:

  1. Firstly, preheat the oven to 180˚C, gas mark 4. Roll the pastry on a floured surface to the thickness of a £1 coin.
  2. Place a 23cm x 4cm loose-bottomed tart tin on a baking sheet and line with the pastry, pressing it right into the corners.
  3. Leave the edges overhanging, prick the base and chill for 20 minutes.
  4. Secondly, line the rested pastry case with parchment and baking beans. Bake for 20-25 minutes until the edges are golden brown.
  5. Remove the baking beans and cook for a further 10 minutes or until the base is a light golden colour.
  6. Cool for a few minutes then use a serrated knife to trim off the overhanging pastry.
  7. Last but not least, fill the pastry case with the leftover veggies and most of the cheese.
  8. Whisk the eggs, cream, milk and thyme leaves together until smooth, season well and pour in the tart case.
  9. Scatter over the remaining cheese and bake for a final 30-35 minutes, or until just set in the middle.
  10. Cool for 5 minutes, remove from the tin and then transfer to a cooling rack.
  11. Serve at room temperature or chilled with some mixed leaves.
