Chunky Monkey Overnight Oats. This is also a simple make-ahead breakfast. It combines oats, bananas, walnuts. Also optional dark chocolate, for a tasty and satisfying way to start the day.

To prepare this scrumptious dish, simply combine rolled oats with your favorite milk or yogurt, a dash of vanilla extracts, honey or maple syrup for sweetness, and a generous helping of sliced bananas, chocolate chips, and chopped walnuts.

Allow the mixture to chill in the refrigerator overnight, and by morning, you’ll have a creamy, flavourful bowl of Chunky Monkey Overnight Oats waiting for you.

Chunky Monkey Overnight Oats.

Ingredients Oats:

  • 500ml skimmed, 1% or semi-skimmed milk or fortified unsweetened soya milk
  • 175g rolled oats
  • 2 medium sized ripe bananas, cut into chunks
  • 60g California walnuts, chopped 
  • 1/2 tsp vanilla extract

Assembly:

  • 2 medium sized ripe bananas, sliced
  • 30g California walnuts, chopped

Method:

  1. Firstly, add milk, oats, banana, walnuts, and vanilla extract equally to four mason jars. Cover and shake jars to combine ingredients. Refrigerate overnight.
  2. When ready to serve, top with banana slices, chocolate chips (if using) and walnuts.
  3. Of course, you can always experiment with different flavoured chocolate too. Or maybe even your favourite chocolate spread? So tasty.

I would also eat this for brunch too.

    Hi Claire! I’d say anytime of day would be good for this refreshing breakfast/snack! I have to ask, what are cloud eggs?? I have never heard of them though I grew up for three years next to Nana Miles and an English family named Hoeren (from Kent) when we all lived on Oahu at Hickam AFB. I did learn to drink children’s tea then! They had the two loveliest cats, one named Blueberry, a British shorthair with grey hair and a tortoise named Patches. We got to take care of Patches when they were transferred back to England when their RAF/Air Force joint exchange tour was over. They are the reason why I am such an anglophile!!! Our current house is very English, to me anyway. Brick. My blog may be French Ethereal, but I really wanted just Ethereal. Wasn’t available.

      Hi Barbara, thanks so much for hosting, stopping by, and featuring my post. Cloud eggs are where you separate the eggs and whisk the whites and then cook them in the oven. They are sweet and look like clouds.
