Clementine Marinated Prawn Cocktail

Clementine Marinated Prawn Cocktail:

A Clementine Marinated Prawn Cocktail’s delicious flavours will raise your seafood experience. This recipe creates a dish that is both light and rich by combining the bright, citrusy tones of fresh clementines with the succulence of large, succulent prawns.

In order to make this delicious dish, marinade the prawns in a zesty mixture of minced garlic, clementine juice, a touch of LoSalt and a little black pepper. This will allow the flavours to combine and infuse the shellfish with a delightful citrus flavour.

After marinating, the prawns are expertly grilled, bringing out their inherent sweetness and giving the meal a hint of smokiness.

Next, the prawns are placed on top of a bed of crisp lettuce, which forms a colourful base for the cocktail. The finishing touch is a drizzle of the remaining clementine marinade, offering a tantalising contrast to the savoury prawns.

Clementine Marinated Prawn Cocktail:

Prep: 15 minutes, plus marinating
Cook: 10 minutes

Serves 4 as a starter

Ingredients:

  • 3 clementines, 2 zested, 3 juiced
  • 1 clove garlic, crushed
  • ¼ tsp LoSalt
  • 200g raw king prawns, patted dry
  • 1 tbsp reduced-fat mayonnaise
  • 3 tbsp fat-free natural yogurt
  • 1 tbsp olive oil
  • 200g Cos lettuce, shredded
  • 1 ripe avocado, sliced
  • 4 wholemeal thick slices of bread, toasted

Method:

  1. Firstly, mix the zest of 1 clementine and juice of 2 with the garlic, half the LoSalt, and a little black pepper, stir in the prawns and marinate for at least 30 minutes.
  2. Mix together the mayonnaise, yogurt, remaining clementine zest and juice, and remaining LoSalt.
  3. Heat the oil in a frying pan and add the prawns and juice and fry on high heat for 2 minutes until pink.
  4. Divide the lettuce between 4 Small Glass Bowls, top with the avocado, prawns, and juices, and spoon over the sauce. Using a 9cm star cutter, cut 4 stars from the toast to serve.

Cooks Tip: Marinate the prawns and make the dressing ahead of time and simply cook and assemble when required.
