This week on the GBBO Week 4 ( how did that happen already!?) it is The batter challenge recipes! Yum!

I love all things made with batter so I am looking forward to watching it. Today I am sharing some Fruity Pancakes made with yummy batter. Fruity pancakes. What’s not to love!?

How To Make Fruity Pancakes:

Whether you love strawberries, blueberries, or peaches, these fruit-filled yogurt pancakes can be customised to suit your favourite flavours.

Serves: 4

Preparation time: 10 minutes
Cooking time: 10 minutes

Ingredients:

  • 100g plain flour
  • 1 tsp baking powder
  • 25g golden caster sugar
  • 150g Rachel’s Greek-style natural low-fat yogurt
  • 1 free range egg
  • 25g berries & cherries muesli
  • 50g blueberries or raspberries
  • vegetable or sunflower oil, for frying
  • golden syrup or maple syrup, to serve

Equipment Needed:

Sieve, bowl & whisk, frying pan & spatula

How To Make Fruity Pancakes Made With A Yummy Yogurt Batter:

The rich, creamy yogurt batter makes these fruit pancakes extra fluffy, while also adding a boost of protein.

1.) Sieve the flour and baking powder into a bowl and mix in the sugar.

2.) In a jug weigh out the yogurt and mix in the egg, whisk until well combined.

3.) Stir in the muesli and blueberries or raspberries.

4.) Heat a lightly oiled heavy-based frying pan. Add a couple of tablespoons of mixture to the pan. When the mixture starts to bubble, then flip over and cook on the other side until golden.

Keep the pancakes warm and serve with a drizzle of golden or maple syrup.

Try: Any leftover pancakes can be kept and re-heated the next day – try warming them in the toaster! Last but not least, enjoy.

Recipe Ideas: Also, serve your fruity yogurt pancakes with a dollop of Greek yogurt and a sprinkle of granola for a hearty, satisfying meal.

    I haven't been watching the GBBO, because I love cake so much it's pretty much all I think about at the moment. Pancakes are such a breakfast favourite here in our house though….now I want them instead!

    Oh my gosh, we all love pancakes in this house. We had some amazing pancakes in the US, so delicious. Yours looks fab too.I would never have thought of adding muesli.
