Home Baked Beans With Jacket Potatoes: Easy Recipe. Hello friends.
The smell of gunpowder hangs in the air, a roaring fire takes the edge off the chill, while excited people gaze in wonder at an ink black sky.
So it can only mean one thing; Bonfire Night and Autumn, with all that season, has to offer.
Of course, I always remember having jacket potatoes on bonfire night when I was growing up. So tasty! Good times.
Especially fun eating them on the garden watching the bonfire and keeping warm.
What more classic filling for a potato is there than baked beans? But home-made baked beans taste even better!
How To Make Home Baked Beans With Jacket Potatoes:
Prep: 10 mins
Cook: 20 mins
Serves 4
Ingredients:
2 tbsp vegetable oil
A small onion, peeled and finely chopped
One medium carrot, peeled and finely chopped
Clove garlic, crushed
2 tsp ground paprika
One tbsp clear honey
1 tbsp Worcestershire sauce
A 400g can chopped tomatoes
2 (400g) cans haricot beans, drained and rinsed
100ml vegetable stock or water
salt and pepper to season
75g mature Cheddar, grated
snipped fresh chives to garnish

Home Baked Beans With Jacket Potatoes Method:
1.) Heat the oil in a large pan, add the onion and carrots and fry for a few minutes until soft.
2.) Add the garlic and paprika and stir well, fry for 30 secs. Add the honey, Worcestershire sauce, tomatoes and bring to the boil, stirring.
3.) Season well then cover and simmer for 15 mins.
4.) Remove the pan from the heat, use a stick blender to blitz the sauce until smooth.
5.) Add the beans and 100ml water and bring back to the boil.
6.) Serve spooned into hot baked potatoes and top each with a heap of grated cheese.
7.) Last but not least, sprinkle with chives if liked.
