How To Make Home-made Cherry And Almond Cake. Hello friends. Happy Sunday.

I woke up so early today. Did my run with Mollie the Collie and now I am watching the London Marathon and dreaming of baking cakes!! As you do!?

So today I am sharing this Home-made Cherry And Almond Cake. How yummy! I also love cakes with cherries in them. Cherries scones are also one of my favourites.

Cherries and almonds were made to go together and by using cocktail cherries you add real depth to the almondy taste with the added maraschino flavour. So yummy!

How To Make Home-made Cherry And Almond Cake:

Serves 8

Ingredients:

100g Butter

175g Caster Sugar

2 tsp Almond Essence

3 eggs – beaten

75g Flaked Almonds

1 Lemon – grated rind

100g Plain Flour

100g Self-Raising Flour

200g Cocktail Cherries in Maraschino Liqueur (drained and cut in half)

How To Make Home-made Cherry And Almond Cake:

1. Firstly, pre-heat oven to 160°C/325°F/Gas 3. Line a 20cm deep cake tin with greased non-stick baking paper.

2. Place the cherry halves in a small bowl and coat with 1 tablespoon of the flour. Put to one side.

3. Place the butter and sugar in a large bowl and cream together. Add the almond essence and then gradually add the eggs, beating well in between each addition. Stir in 60g of flaked almonds and the lemon rind.

4. Fold in both flours and then gently fold in the cherries. Spoon the mixture into the prepared tin and level the surface

5. Sprinkle the remaining almonds over the surface and bake for approx. 1 hour 10 minutes until golden.

6. Remove from the oven and allow to cool on a wire rack.

7. Last but not least, lightly dust with icing sugar before serving.
