Overnight Oats With Picota Cherry Fruit Compote.

Over the last few weeks, I have teamed up with Jerte Picota Cherries to share a variety of recipes using their scrumptious cherries.

Last week I made some tasty Afternoon Cherry Scones With Cream And Jerte Picota Cherries and today I am sharing some Overnight Oats With Picota Cherry Fruit Compote.

About The Jerte Picota Cherry:
The Jerte Picota Cherry is a special variety of cherry that is native to the beautiful Jerte Valley in Northern Extremadura, Spain, 200km west of Madrid. This area is famous for the incredible cherry blossom of more than a million trees that takes place each year.
It is a 100% natural product that follows a natural growing season, which is why the arrival of the Jerte Picota Cherry changes each year and why they are only available for six weeks each summer.
When the cherries are ready to be harvested at optimum ripeness, they are hand-picked off the trees, leaving the stalks behind, and placed into chestnut baskets. This is why they are sold without a stalk.

Jerte Picota Cherries are usually available from the end of June until the beginning of August in the UK, and they are expected to arrive in stores from the beginning of July, due to the cold winter this year.
The Jerte Picota Cherry is a P.D.O. Product (P.D.O. standing for Protected Designation of Origin) which certifies that the fruit has been grown, harvested and packed under rigorous quality-controlled procedures and has come exclusively from the Jerte Valley in Spain.
The Jerte Picota is not only unique from its P.D.O. status but also from its stalkless harvest and its shape, which has a slight peak to the base, hence the word ‘Picota’ means ‘peaked’.

How To Make Overnight Oats With Picota Cherry Fruit Compote:
Serves 2
You Will Need:
For The Oats:
100g Porridge Oats
200ml Semi-skimmed milk
8 Tablespoons of Greek yoghurt
For The Cherry Compote:
200g Jerte Picota Cherry washed, stones removed and cut into halves
1 Teaspoon of sugar
2 Tablespoons of water
2 Tablespoons of orange juice
Half a teaspoon of cinnamon
Toppings:
1 Large banana
Maple syrup
2 handfuls of cashew nuts

What To Do:
Step One:
Use 2 mason jars with lids or old cleaned out jam jars.
Measure out 50g of porridge oats into each jar.
Pour 100ml of semi-skimmed milk into each jar and pop 2 heaped tablespoons of yoghurt in.
Stir well, pop the lid on tight, give a shake and pop into the fridge overnight or for around 8 hours.


Step Two:
Wash the Jerte Picota Cherry, remove stones, cut into halves and place in a pan with 2 tablespoons of water, 2 tablespoons of orange juice, 1 tsp of sugar and half a teaspoon of cinnamon.
Bring the mixture to the boil then simmer for around 13 minutes, stirring occasionally until all the juices soak in.
Pop onto a plate to cool.
Place in an airtight container and place in fridge until needed.

Step Three:
Chop your banana and place into the bottom of two glasses with some maple syrup. Stir your overnight oats and add 2 more tablespoons of Greek yoghurt into each jar and stir.
Pop half of your overnight oats into each glass, share the cherry compote and then add the remaining overnight oats.
Top with a handful of cashew nuts onto each glass.

An alternative, add the ingredients into each jar and give a shake.


So yummy! A great grab and go breakfast that will keep you filled up until lunch.

I usually had overnight oats for breakfast but I have been too tired lately that I forget to make some before I go to bed. I will try your suggestion to add cherries. We have a lot of them in the house right now.
