Happy Thursday Friends. Today I have teamed up with Sainsbury’s to share a new favourite tasty Summer recipe.
The new potato season is in full swing, and returning into Sainsbury’s stores exclusively this season are the Taste the Difference British Gems baby new potatoes.
Their distinctive buttery flavour and golden colour make British Gems the perfect potatoes to takeover from Jersey Royals during the summer months.
They are grown in Britain, freshly dug every day before being washed, packed and distributed to Sainsbury’s stores within 48 hours. You can’t get much fresher than that!

These British Gem potatoes are ideal for boiling, steaming, roasting and even baking.
Crushed, diced, sliced or roasted, they are delicious!
What’s more, they taste even better with their skins left on, so preparation is minimal- just a quick wash in cold water.

We are big fans of Britsh Gems and today I am sharing a tasty lunch recipe I made up for me and my eldest Son. I whipped up a Sainsbury’s British Gems Wedges, Ham And Egg Summer Salad.
Remember last year when I roasted my potatoes; British Gems Baby Potatoes, Egg & Tuna Spinach Salad?
Well, this year I am loving making British Gems Wedges from the potatoes. This is my new favourite go-to recipe for making meal times a little different as we are all fans of wedges.
I made this up while my Daughter was at school but as soon as she saw the photos, I had to make up some gluten-free wedges for her. For her gluten-free wedges, I made them up the same as below but without the fajita smoky seasoning. Just with oil, salt and pepper. They went down a treat as an afternoon snack.
Here is my Sainsbury’s British Gems Wedges, Ham And Egg Summer Salad. You’ll love this fresh and peppery watercress salad with boiled eggs, radishes, ham and tasty British Gem wedges.
Serves 2
How To Make Sainsbury’s British Gems Wedges, Ham And Egg Summer Salad:
Serves two but easily multiplied
You Will Need:
For The Wedges:
75og Bag of Sainsbury’s British Gem baby new potatoes
Olive Oil
Seasoning; I used 3 tbsp of fajita smoky seasoning, salt and freshly ground pepper
For The Salad:
80g Bag of hot peppery watercress
A large handful of radishes
4 large eggs
Sauces of your choice; I used mayonnaise and BBQ sauce
4 Large slices of ham

Step One:
Fill a medium pan with water. Lightly clean the potatoes and cut into quarters and place into the pan. Bring the pan of water to the boil and simmer the potatoes for around 5 minutes.
Preheat a fan oven to 180˚C /350˚F or Gas Mark 4.
After 5 minutes, drain the potatoes, pop them into a large ceramic roasting dish/oven tray with sides and drizzle with olive oil, sprinkle the fajita smoky seasoning over top, and season with salt and freshly ground pepper.
Mix the potatoes in the oil and seasonings and evenly spread them out.
Cook in the top half of the oven for around 26-34 minutes. Flipping them over at halfway and moving some from the middle outwards and some from the outer inwards to cook evenly.

Step Two:
Around 10 minutes before the wedges are cooked start on your eggs.
Bring a medium pan of water to the boil, pop the eggs inside gently and simmer for 6-7 minutes.
Drain the pan and then run cold water through the pan a few times to cool the eggs.
Crack the shells and remove all the eggshell. Run under cold water to remove any shell and set aside until ready to serve.

Step Three:
Remove your wedges from the oven and leave to cool slightly whilst you get the salad ready.

Step Four:
Prepare your salad.
Wash and drain your hot peppery watercress and arrange at the bottom of your serving dish.

Wash and slice your radishes, set aside.
Arrange your wedges onto the hot peppery watercress and cut your eggs into 4 to make them look like wedges too. Arrange the eggs on top.
Pop on your radishes and roll up some ham for the sides.
A Sprinkle of extra pepper is optional.

You may want to add a pot of your favourite dips to the middle, simply make a little hole in the centre to pop the pot.
This was so tasty and impressed my Son. He says he can cook better than me now, although since he has been back home we haven’t seen much evidence of that!! Ha. He has made me a few lunchtime snacks though, so I will let him off…
