Scrambled Eggs, Avocado And Parmigiano Reggiano Bagels.

I have just joined back up at the gym and once again I am trying to get back into a healthier routine. After Chrismas, I plan to go regularly to improve my fitness and I need to start improving my diet too.

When I get to the gym I always work hard. Sometimes it is the getting to the gym that is the hard part!! Rain, snow, or apathy often keeps me away though. If  I do make it I like to eat healthy on my return home. I know how hard it was to burn off the calories!! So I don’t like wasting all that effort…

When I get home from the gym I crave healthy food. My eldest Son always tells me to make sure I have a balance of Protein Carbs and Fats.

I always make eggs for some reason and 9 out of 10 times it is scrambled egg.

Today I am sharing one of my favourites after gym workout snacks. This gives me the right amount of carbs protein and fats back into my system. Thanks, Son!!

Serves one but is easily multiplied.

How To Make Scrambled Eggs, Avocado And Parmigiano Reggiano Bagels:

Ingredients:

  • 2 medium egg
  • 1 Tbsp Olive oil
  • Black pepper, grinded
  • 1 bagel
  • 1 medium ripe avocado
  • 3 Tbsp of Grated Parmigiano-Reggiano Parmesan Cheese

Step One:

Cut the bagel in half and place them in the toaster to cook later.

Step Two:

Crack the eggs into a bowl and lightly whisk until the egg yolk and egg whites are nicely mixed together. Grind some black pepper over.

Step Three:

Cut the avocado in half, remove the stone and peel the skin off. Mash the avocado up with the back of a fork.

Step Four:

Heat a non-stick frying pan with Olive oil over a medium heat. Start to toast the bagels. Pour the eggs into the pan and leave for a few seconds. Stir them with a plastic spatula. Leave for a few seconds, then repeat until eggs looked cooked and no juice is still in the eggs.

Step Five:

Grate some Parmigiano-Reggiano Parmesan cheese and set aside 3 tablesppons full.

Step Six:

Pop the cooked bagel on a plate, sprinkle 1 tablespoon of Parmigiano-Reggiano, Parmesan cheese onto both bagels. Divide the scrambled egg between both bagels. Sprinkle 1 tablespoon of Parmigiano-Reggiano, Parmesan cheese onto both bagels. Share the smashed avocado onto both bagels and sprinkle the remaining Parmigiano-Reggiano, Parmesan cheese on top to finish.

Serve straight away whilst nice and warm.

Healthy, Delicious, Moorish and very filling.

The great thing about this after gym workout snack/breakfast/ brunch or lunch is that you can mix and match it.

How about trying it with a fried egg or poached egg? All equally delicious!

Parmigiano Reggiano is a P.D.O. product. P.D.O. products are defined and protected by European Union law in order to defend the reputation of regional foods. This mark ensures that Parmigiano Reggiano can only be produced in Parma, Reggio Emilia, Modena, Bologna to the west of the Reno River and Mantua to the east of the Po River.

    Ah I'm a massive fan of avocado on toast, but I've never thought of having it with scrambled eggs. That said, I always add parmesan to eggs – it's an essential!
