Each cookie is a harmonious blend of mixed spices, creating a symphony of autumn spices that dances on your palate. The addition of chopped walnuts not only adds texture but also enhances the overall nutty richness of the cookie.

What are the best apples for cookies? This recipe uses small red apples.

How long does it take for cookies to bake? These take about 15 to 20 minutes.

What’s the best flour for cookies? This recipe uses self raising flour.

What is the best temperature for baking cookies? 180oC, gas mark 4

What is the best butter for baking cookies? Proper butter. Salted or unsalted to your preference.

Prep: 15 minutes

Cook: 15-20 minutes

Makes: 20 cookies

Ingredients:

  • 100g butter, softened
  • 125g caster sugar
  • 1 medium egg, beaten
  • 1 small red apple, peeled, cored and finely diced
  • 50g dried cranberries
  • 50g California Walnuts, chopped
  • 300g self-raising flour
  • 2 tsp mixed spice

Method:

  1. Preheat the oven to 180oC, gas mark 4. Line 1-2 large baking trays with baking parchment.
  2. Whisk the butter and sugar together until pale. Whisk in the egg and stir in the apple, cranberries and walnuts. Stir in the flour and mixed spice to give a stiff dough.
  3. Divide into 20 balls and flatten slightly, place on the baking trays and bake for 15-20 minutes until golden.
  4. Allow to cool slightly on the tray before transferring to a cooling rack.
