Summer Coleslaw: The Ultimate Picnic Salad. Hello friends. So how are you today? Do you also fancy making some tasty coleslaw up for tea?

The ultimate picnic salad, combining white and red cabbage, carrot, red onion and radishes; also, smothered in a yogurt and herb dressing.

How yummy? Also, a great side dish to any Summer meal in the garden.

Summer Coleslaw: The Ultimate Picnic Salad:

Serves : 4-6

Preparation time: 15 minutes

Ingredients:

2 carrots, peeled and grated

200g red cabbage, shredded

200g white cabbage, shredded

2 red onions, finely sliced

3 radishes, sliced

200g Rachel’s low fat natural yogurt

2tsp lemon juice

2tbsp olive oil

1 tsp Dijon mustard

A tsp chopped fresh parsley

One tsp chopped chives

1 tsp chopped mint

Salt and pepper

Summer Coleslaw: The Ultimate Picnic Salad Method:

1.) Firstly, add all the vegetables in a large bowl.

2.) In a separate bowl add the yogurt, lemon juice, oil and mustard and mix well.

3.) Add the herbs and mix again.

4.) Season to taste.

5.) Last but not least, serve immediately.

Tip: Also, try the coleslaw with cold meats, burgers, jacket potato or pizza.

    This sounds so good! So many of the cole slaw recipes we find here in the states are loaded with sugar. I’m going to have to try this recipe. Pinned.
