The base of these free-from pancakes typically uses a gluten-free flour blend, often made from rice flour, potato starch, or oat flour.

This combination helps recreate the light, airy texture that American pancakes are known for.

Baking powder is essential for that signature rise, while a pinch of salt balances the flavours.

Instead of dairy milk, plant-based options like almond, oat, or soy milk work beautifully.

Eggs can be included if suitable, or replaced with alternatives like mashed banana or a flaxseed mixture for a vegan version.

You could also add a touch of vanilla extract and a small amount of sugar or maple syrup enhances the flavor without overwhelming it.

How To Make Free-From American Style Pancakes:

Makes 10

Cooking time 15 minutes

Ingredients:

  • 250g FREEE Plain White Flour
  • 2 tbsp icing sugar
  • 1 ¾ tbsp FREEE Baking Powder
  • 2 eggs (or 2 tbsp FREEE Chickpea Flour + 4 tbsp water)
  • 150ml milk (or vegan milk)
  • 50g butter, melted
  • Oil for frying
  • Sliced banana, chopped almond and maple syrup for serving

Equipment Large frying pan.

  1. Put the flour, icing sugar and baking powder into a bowl and stir to combine.
  2. Place an empty bowl on your weighing scales and crack in the eggs (or chickpea flour + water). Slowly add the milk until the mixture weighs 250g. Beat together well.
  3. Stir in the dry ingredients, then the melted butter. Beat into a smooth thick batter.
  4. Put a little oil into a frying pan, roll it around to cover the surface and heat until nice and hot.
  5. Pour batter into the pan to make 8cm/3” circles and cook on medium heat.
  6. When bubbles appear on the surface and the base is golden turn the pancake over and cook the other side.
  7. Repeat until the batter is used.
  8. Serve warm with your favourite toppings.

These pancakes are versatile enough to suit any taste while remaining completely free-from.

    Hi Claire, these sound good and for once I will have no excuse for not cooking pancakes on pancake day! Feb 13th noted. When my daughter was young she couldn't eat eggs or anything containing eggs, it did really nasty things to her(she is fine now and loves them), but how having the internet would have made things so much easier. There was no way to have known that chicjpea flour and water can be used instead of eggs!Thank you for linking up with the #MMBC.xx

      Hi Heather, I think over here in the UK we call the big flat pancakes, pancakes and the small fluffy ones American pancakes. I love both types and these are my favourites.
