I was looking through some old posts to find a nice recipe for A New Years Day treat and stumbled upon this recipe I posted a few years ago.

So I thought I would re-share for anyone else looking for a yummy recipe today. I wonder if you can get rhubarb in the shops right now? I will have to go and have a look!

Begin by preheating your oven and then trim and cut the rhubarb into bite-sized pieces, ensuring they are tender and not overly sized. Combine the rhubarb with golden caster sugar, the water and, the ginger wine and simmer gently until syrupy. Allowing their natural flavors to meld together.

Meanwhile, create a crumbly topping. The aroma of this dessert is simply irresistible, and when served warm with a scoop of vanilla ice cream, it’s a dessert that encapsulates the essence of summer.

How To Make BerryWorld Strawberry and Rhubarb Crumble:

Strawberry And Rhubarb Crumble.

Serves: 6

Preparation time: 15 minutes || Cooking time: 40 minutes

You’ll Need:

  • 500g rhubarb
  • 100ml water
  • 100 grams golden caster sugar
  • 1 tbsp Stones ginger wine
  • 250g strawberries
  • 75g butter
  • 175g self-raising flour
  • 1/2 tsp ground ginger
  • 60g Demerera sugar
  • 1 Crunchie bar, crushed

How To Make A BerryWorld Strawberry And Rhubarb:

What To Do:

  1. Firstly, preheat your oven to 180c.
  2. Trim and cut the rhubarb and place half of it in a saucepan with the golden caster sugar, the water and, the ginger wine and simmer gently until syrupy.
  3. Halve the strawberries the place all the fruit and rhubarb syrup into a baking dish.
  4. To make the crumble, put the butter, flour into a bowl and, rub with your fingers until it resembles breadcrumbs. Stir in the sugar, ginger, and crushed Crunchie bar and sprinkle generously over the fruit.
  5. Bake for 30 minutes until golden and bubbling. Last but not least, enjoy.
