Anjum Says: I love okra – it is such a great vegetable, not too watery, not too starchy, not too metallic and really good for you. I have never found it “gluey” when cooked properly, despite its unfair reputation. There are so many ways to cook it, but I do love it in this aachari bhindi, and it is really easy to cook.

These spices and simply sweet, tart flavours add masses of flavour to a simple vegetable. It is a slightly tangy recipe and works well with any meat, chicken, fish or lentil dish. Four Seed-Spiced Okra With Tomatoes By Anjum Anand.

Of course, there are a lot of prawns, seafood sauce, and paprika! Cocktails with prawns are a lot of fun. Prawns are another something I adore in a number of recipes. It’s great in salads with prawn sauce, though. They bring back memories of my adolescent years. If I were to go out to dine, I would always order one of those.  I had to have the prawns with Rosemary dressing every time. I enjoy making them as well. They’re sophisticated and retro at the same time. I’m thinking about the good old 1980s, which never go out of style.
