This mango and pineapple ice cream is creamy, refreshing, and packed with tropical flavour. Made with just a few simple ingredients, it’s an easy homemade dessert perfect for summer.

Easy Mango Pineapple Ice Cream (Creamy Tropical Dessert):

Easy Mango Pineapple Ice Cream (Creamy Tropical Dessert).

Serves 6

Ingredients:

  • 1 x 200g Nature’s Finest Mango in coconut water
  • 1 x 200g Nature’s Finest Pineapple in coconut water
  •  400g can reduced fat coconut milk
  • 2 tbsp sugar free sweetener, e.g Canderel Spoonful
  • Mango and toasted coconut to decorate

How To Make Easy Mango Pineapple Ice Cream.

  1. Drain the fruit, reserving the juice.
  2. Place the fruit in a blender with 100mls of the reserved juice and puree until smooth.
  3. Save the remaining juice to use in a smoothie
  4. Add coconut milk and sweetener and blend for 30 seconds.
  5. Pour the mixture into an ice cream machine and churn until thick and creamy.
  6. Transfer to the freezer.
  7. Serve with slices of mango and toasted coconut.
