Keep in mind that the appeal of an Eton Mess rests in its delightfully untidy appearance, so don’t stress too much about getting it quite right.

Choose ripe, aromatic, fresh strawberries that are a vibrant red colour. Your dessert will have the best flavour and sweetness thanks to them.
If making the meringues, make sure your meringue is soft on the inside and wonderfully crisp on the exterior. Whip the egg whites until stiff peaks form, then add sugar gradually while still whisking.
To get that desired texture, bake them at a low temperature for a longer amount of time.
How To Make A Strawberry Eton Mess Recipe With A Yogurt Twist.
Serves 4-6
Preparation time 10 minutes
Ingredients:
- 200g strawberries, stalks removed and quartered
- 80g caster sugar or icing sugar
- 4 meringues, shop brought, crushed
- 300ml double cream, whipped
- 200g Rachel’s Low Fat Raspberry Yogurt

How To Make:
- In a large bowl take the strawberries in a bowl and sprinkle over the sugar, with the back of a fork squash some of the strawberries to release the juices.
- Add the crushed meringues, cream and yogurt and gently fold together with a spatula.
- Spoon into serving dishes or glasses and serve immediately.
Just before serving, assemble. Assemble your Strawberry Eton Mess immediately before serving to keep the ideal texture. The meringue and cream may lose their crunchiness if they are kept out too long.
Try: Making this extra special by adding a drizzle of your favourite liqueur.
