It has been another red-hot weekend, weather-wise and my Daughter and I got to go to the seaside on Saturday, which was lovely but about 6 hours of travelling in one day was very tiring.

    Happy Spinach Day! I just got thinking of Popeye! I like spinach and eat it more often in the form of a salad so having different options is nice. I would like to try the spinach and ricotta cannoli! It sounds so delicious! Maureen

  5. On the topic of spinach, yesterday my husband and I had a lunch date out at a restaurant on Lake Ontario. We had spinach salad with candied peanuts, craisins, fresh blueberries and strawberries, crumbled goat cheese and a strawberry vinaigrette. And it was so delicious! The combination of flavors was absolute perfection! And then we had shrimp tacos and truffle fries. So good!

    I love fresh spinach. I always bake it in a very hot pan for a few minutes and add feta cheese to it. That’s it. With a vegetarian burger.
