I am really good at keeping focused on my blog. I am always blogging, thinking of blogging, planning to blog, taking photos or planning my next blog post.
Most hours of every day. I eat sleep repeat blogging as I love to keep my mind focused, none stop. Today I have a yummy recipe to share with you from BerryWorld.

Fruity Meringues: Great For Afternoon Tea:
BerryWorld Fruity Meringues: Great For Afternoon Tea. These classic meringues are topped with cool whipped cream and your choice of berries, they also make a delicious pudding or afternoon treat.
Fruity meringues are a delightful choice for afternoon tea, offering a light, airy sweetness that pairs perfectly with a warm cup of tea.
These meringues, with their crisp exterior and soft, melt-in-your-mouth centers, can be infused with flavours like raspberry, kiwi, or strawberries, adding a refreshing, tangy twist to the classic dessert.
Their vibrant colours and delicate textures bring an elegant touch to any tea table, making them as visually appealing as they are delicious.
Served alongside fresh fruit, whipped cream, or a drizzle of fruit coulis, fruity meringues provide a satisfying treat without being overly heavy, making them ideal for savouring during a relaxed afternoon with friends.

BerryWorld Fruity Meringues: Great For Afternoon Tea. Celebrate summer flavours with this light and airy meringues, bursting with the natural sweetness of strawberries and other seasonal fruits.
Serves: 8
Preparation time: 15 minutes plus cooling time
Cooking time: 1 ¼ hours
What You Need:
4 egg whites
200g caster sugar
1 tsp cornflour
200ml double cream
Your choice of berries to top
What To Do:
- Preheat the oven to 100C and line 2 baking sheets with non-stick parchment.
- In a sparkling clean bowl with very clean whisks, whisk the egg whites until stiff then slowly add the caster sugar whilst whisking. Continue whisking until the mixture becomes stiff and shiny. Add the cornflour and whisk briefly to incorporate.
- Spoon 4 pillows of meringue, well-spaced, onto each baking sheet. Make a slight indent in the top of each. Turn the oven down to 80C and cook for 1 ½ hours then turn off the oven and leave to go cold.
- When ready to serve, whip the cream to soft peaks and spoon into the indent of each meringue. Top with your choice of berries and serve.
Note:
Also, if using less sweet berries, such as blackcurrants or gooseberries, you can choose to make them into a quick compote. Heat the berries in a pan with a few spoons of sugar and a dash of water. Taste and add more sugar to suit your taste and tartness of the berries.

I only blog for fun and I feel like I am eating and sleeping blogging! This weekend was super busy with birthdays, errands and family that while I did shut down, it was a little funny to me my mind in the background was thinking of how to finish up my next post.
